Ingredients
  

  • 2 pounds ground beef
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1/4 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (15 ounces) kidney beans drained and rinsed
  • 1 can (15 ounces) pinto beans drained and rinsed
  • 1 cup beef broth
  • 1 tablespoon olive oil

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and minced garlic to the pot and sauté until soft.
  • Add ground beef to the pot and cook until browned.
  • Drain any excess fat from the pot.
  • Stir in chili powder, ground cumin, paprika, cayenne pepper, ground cinnamon, salt, and black pepper.
  • Add the diced tomatoes, kidney beans, pinto beans, and beef broth to the pot.
  • Stir everything together until well combined.
  • Bring the mixture to a boil, then reduce the heat to low.
  • Cover and let the chili simmer for 1.5 to 2 hours, stirring occasionally.
  • Remove from heat and let it rest for 10 minutes before serving.

Notes

For a richer flavor, consider making the chili a day ahead and reheating it before serving, as this allows the flavors to meld together. Adjust the spice level to your liking by adding more cayenne pepper for heat or including fresh jalapeños. Serve with toppings like shredded cheese, sour cream, or chopped green onions for added taste and texture.
