Ingredients
  

  • 1 pound ground beef
  • 1 pound smoked sausage sliced
  • 1 large onion chopped
  • 3 clove garlic minced
  • 4 cup beef broth
  • 1 can (15 ounces) kidney beans drained and rinsed
  • 1 can (15 ounces) pinto beans drained and rinsed
  • 1 can (15 ounces) corn drained
  • 1 can (15 ounces) diced tomatoes
  • 2 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large potato peeled and diced

Instructions
 

  • Heat the large pot over medium heat and brown the ground beef until fully cooked.
  • Drain excess fat and add the smoked sausage slices to the pot.
  • Add the chopped onion and minced garlic, cooking until the onion is translucent.
  • Pour in the beef broth and stir to combine.
  • Add the kidney beans, pinto beans, corn, and diced tomatoes to the pot.
  • Stir in the chili powder, cumin, salt, and black pepper.
  • Add the diced potatoes and mix well.
  • Bring the stew to a boil, then reduce the heat to low and simmer for 45 minutes.
  • Stir occasionally to prevent sticking and ensure even cooking.
  • Remove the pot from heat and let the stew rest for 10 minutes before serving.

Notes

For additional flavor, consider adding a dash of hot sauce or a pinch of cayenne pepper if you prefer a spicier stew. This dish pairs well with crusty bread or cornbread on the side. Adjust the seasoning to taste and feel free to substitute your favorite beans or add extra vegetables for variety.
