Ingredients
  

  • 2 tablespoons olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon ginger grated
  • 1 tablespoon red curry paste
  • 4 cups chicken broth
  • 1 can (14 ounces) coconut milk
  • 2 tablespoons fish sauce
  • 1 tablespoon lime juice
  • 1 pound salmon fillet skin removed and cut into cubes
  • 1 cup cherry tomatoes halved
  • 1 cup mushrooms sliced
  • 1 red bell pepper sliced
  • 1/2 cup fresh cilantro chopped
  • Salt and pepper to taste

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and sauté until translucent.
  • Stir in minced garlic and grated ginger and cook for 1 minute.
  • Add red curry paste and sauté for another minute.
  • Pour in chicken broth and bring to a simmer.
  • Stir in coconut milk, fish sauce, and lime juice.
  • Add salmon cubes, cherry tomatoes, mushrooms, and bell pepper to the pot.
  • Simmer for 10-12 minutes until the salmon is cooked through.
  • Season with salt and pepper to taste.
  • Remove from heat and let rest for 5 minutes.
  • Garnish with fresh cilantro before serving.

Notes

For a spicier version, you can add more red curry paste or toss in a sliced chili pepper. To enhance the flavor, consider adding a few kaffir lime leaves during cooking and remove them before serving. Adjust the thickness of the soup by adding more or less coconut milk, depending on your preference.
