Ingredients
  

  • 2 tablespoons olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon tomato paste
  • 4 cups fresh tomatoes chopped
  • 2 cups vegetable broth
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup heavy cream
  • 2 tablespoons fresh basil chopped

Instructions
 

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and sauté until translucent.
  • Stir in the minced garlic and cook for 1 minute.
  • Add the tomato paste and cook for another 2 minutes, stirring constantly.
  • Add the chopped tomatoes and vegetable broth to the pot and bring to a simmer.
  • Stir in the sugar, salt, and black pepper.
  • Cover the pot and let the soup simmer for 20 minutes.
  • Remove the pot from heat and let it cool slightly.
  • Use a blender or immersion blender to puree the soup until smooth.
  • Return the pot to low heat and stir in the heavy cream.
  • Heat the soup gently, without bringing it to a boil.
  • Stir in the fresh basil before serving.

Notes

For a richer flavor, you can roast the tomatoes before adding them to the soup. Also, adjusting the amount of cream can change the thickness and creaminess of the bisque to your preference. If you want a bit of spice, consider adding a pinch of red pepper flakes when cooking the garlic.
