Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon dried Italian herbs
  • 1/4 teaspoon red pepper flakes
  • 28 ounces crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 16 ounces gnocchi
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • salt and pepper to taste
  • fresh basil leaves for garnish

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add the chopped onion and sauté until translucent, about 5 minutes.
  • Stir in the minced garlic, dried Italian herbs, and red pepper flakes, cooking for 1 minute until fragrant.
  • Pour in the crushed tomatoes and chicken or vegetable broth, then bring to a simmer.
  • Add the gnocchi to the pot and cook for about 5 minutes, until they float to the top.
  • Stir in the heavy cream and grated Parmesan cheese, allowing the soup to heat through.
  • Season with salt and pepper to taste.
  • Remove the pot from heat and let the soup rest for 5 minutes before serving.
  • Ladle the soup into bowls and garnish with fresh basil leaves.

Notes

For a richer flavor, consider roasting the tomatoes before adding them to the soup. You can also add a splash of balsamic vinegar for a hint of sweetness. For a vegetarian version, use vegetable broth and ensure your Parmesan is suitable for vegetarians. Adjust the level of red pepper flakes based on your heat preference.
