Ingredients
  

  • 2 tablespoons olive oil
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 1 bell pepper chopped
  • 4 large tomatoes chopped
  • 2 cups vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 cup potatoes diced
  • 1 cup carrots sliced
  • 1 cup green beans trimmed and halved

Instructions
 

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and sauté until translucent.
  • Stir in the minced garlic and chopped bell pepper; cook for 2 minutes.
  • Add the chopped tomatoes and cook until they start to break down.
  • Pour in the vegetable broth and bring the mixture to a simmer.
  • Season with salt, black pepper, oregano, and basil.
  • Add the diced potatoes and sliced carrots to the pot.
  • Simmer the stew for 30 minutes or until the vegetables are tender.
  • Stir in the green beans and cook for an additional 5 minutes.
  • Remove the pot from heat and let the stew rest for 10 minutes before serving.

Notes

For best results, use ripe tomatoes as they provide a richer flavor to the stew. You can adjust the seasoning according to your taste preference, and feel free to add your favorite vegetables or protein to make the dish more filling. Always taste the stew before serving to ensure the seasoning is balanced.
