Ingredients
  

  • 1 cup fresh strawberries hulled and quartered
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • 1 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon zest
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter melted
  • 1/2 cup milk
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • In a mixing bowl, combine strawberries, blueberries, raspberries, 1/4 cup of sugar, cornstarch, and lemon zest.
  • Pour the berry mixture into a baking dish.
  • In a separate bowl, whisk together flour, baking powder, salt, and the remaining sugar.
  • Add melted butter, milk, and vanilla extract to the dry ingredients and stir until a batter forms.
  • Pour the batter evenly over the berry mixture in the baking dish.
  • Bake in the preheated oven for 40 minutes or until the top is golden brown and the berries are bubbling.
  • Allow the cobbler to rest for 10 minutes before serving.

Notes

For best results, use fresh berries, but if they are not available, frozen berries can be a good substitute; just be sure to thaw and drain them well beforehand. Adjust the sweetness to your preference by tasting the berry mixture and adding more sugar if necessary.
