Ingredients
  

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 medium onion diced
  • 1 bell pepper diced
  • 2 cloves garlic minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can kidney beans drained and rinsed
  • 1 can black beans drained and rinsed
  • 1 can diced tomatoes
  • 1 cup chicken broth
  • 2 tablespoons tomato paste
  • 1 tablespoon lime juice
  • 1/4 cup fresh cilantro chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add ground turkey and cook until browned, breaking it up with a wooden spoon.
  • Add onion, bell pepper, and garlic; cook until vegetables are soft.
  • Stir in chili powder, cumin, paprika, salt, and black pepper.
  • Add kidney beans, black beans, diced tomatoes, chicken broth, and tomato paste.
  • Bring to a simmer and cook for 30 minutes, stirring occasionally.
  • Remove from heat and stir in lime juice and cilantro.
  • Let the chili rest for 10 minutes before serving.

Notes

For the best flavor, make sure to let the chili simmer long enough for all the spices to meld together. You can adjust the spice level to your liking by adding more chili powder or including a dash of cayenne pepper. Leftovers can be stored in the refrigerator for up to 3 days and often taste even better the next day as the flavors continue to develop.
