Ingredients
  

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes
  • 2 tablespoons tomato paste
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken broth
  • 8 lasagna noodles broken into pieces
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1/4 cup fresh basil leaves chopped
  • 1 cup ricotta cheese

Instructions
 

  • Heat olive oil in a large pot over medium heat and add ground turkey, cooking until browned.
  • Add diced onion and minced garlic to the pot and sauté until the onion is translucent.
  • Stir in dried oregano, dried basil, red pepper flakes, and tomato paste, cooking for 1 minute.
  • Pour in crushed tomatoes and chicken broth, bringing the mixture to a boil.
  • Add broken lasagna noodles and reduce the heat to a simmer, cooking until noodles are tender.
  • Stir in heavy cream and Parmesan cheese, seasoning with salt and pepper as needed.
  • Remove the pot from heat and let the soup rest for 5 minutes.
  • Serve the soup in bowls, garnished with fresh basil and a dollop of ricotta cheese.

Notes

For a richer flavor, you can use a combination of ground turkey and Italian sausage. Be sure to break the lasagna noodles into small, bite-sized pieces for easier eating. You can adjust the creaminess by adding more or less heavy cream according to your preference. To deepen the flavor, consider simmering the soup for a little longer, allowing the ingredients to meld together beautifully.
