Ingredients
  

  • 2 cup cooked turkey shredded
  • 8 cup chicken broth
  • 2 cup egg noodles
  • 1 cup carrots sliced
  • 1 cup celery sliced
  • 1 cup onions diced
  • 2 clove garlic minced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 2 tablespoon fresh parsley chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add onions, carrots, and celery to the pot, and sauté until the vegetables are tender.
  • Stir in the garlic and cook for an additional minute.
  • Pour in the chicken broth and bring to a boil.
  • Add the egg noodles to the boiling broth and cook according to package instructions.
  • Stir in the shredded turkey, salt, pepper, thyme, and bay leaf.
  • Reduce the heat and let the soup simmer for about 10 minutes.
  • Remove the bay leaf before serving.
  • Garnish with chopped parsley and serve hot.

Notes

To enhance the flavor, consider using homemade chicken broth or adding a splash of white wine to the soup while simmering. For more depth, you can also include a teaspoon of soy sauce or Worcestershire sauce. Adjust the seasoning according to your taste preference, and feel free to add more vegetables or herbs for a heartier version.
