Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 2 carrots sliced
  • 2 celery stalks sliced
  • 1 pound ground turkey
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • salt and pepper to taste
  • 6 cups chicken broth
  • 1 can diced tomatoes 14.5 ounces
  • 1 cup green beans trimmed and cut into 1-inch pieces
  • 1 cup corn kernels
  • 1 cup frozen peas
  • 1 bay leaf

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add diced onion and sauté until translucent.
  • Stir in minced garlic, sliced carrots, and sliced celery, cooking for 5 minutes.
  • Add ground turkey to the pot and cook until browned.
  • Season with thyme, oregano, salt, and pepper.
  • Pour chicken broth and diced tomatoes into the pot and bring to a boil.
  • Add green beans, corn, peas, and bay leaf to the soup.
  • Reduce heat to low and let simmer for 30 minutes.
  • Remove the bay leaf from the pot.
  • Let the soup rest for 10 minutes before serving.

Notes

For a richer flavor, consider using homemade chicken broth if possible. You can also substitute or add other vegetables based on your preference, such as zucchini or bell peppers. For a spicier kick, include a pinch of red pepper flakes. If you prefer a thicker consistency, mash some of the cooked vegetables before serving.
