Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 1 teaspoon ground turmeric
  • 4 cups chicken broth
  • 1 pound chicken breast cubed
  • 2 medium carrots sliced
  • 1 cup coconut milk
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons fresh cilantro chopped
  • 1 tablespoon lime juice

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and sauté until translucent.
  • Stir in minced garlic and grated ginger, cooking for another minute.
  • Add ground turmeric and stir well to combine.
  • Pour in chicken broth and bring to a simmer.
  • Add cubed chicken breast and sliced carrots to the pot.
  • Cook for 20 minutes or until chicken is cooked through.
  • Stir in coconut milk and let it heat through.
  • Season soup with salt and pepper to taste.
  • Remove from heat and stir in fresh cilantro and lime juice.
  • Let the soup rest for 5 minutes before serving.

Notes

For the best flavor, make sure to use fresh ginger and high-quality turmeric powder. You can add more vegetables like spinach or kale for extra nutrition. If you prefer a thicker soup, you can blend part of it before adding the chicken back in. Adjust the seasoning to your taste, and serve hot with a slice of crusty bread for a complete meal.
