Ingredients
  

  • 12 ounces Penne pasta
  • 1 tablespoon Olive oil
  • 1 pound Chicken breast cut into bite-sized pieces
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1 teaspoon Italian seasoning
  • 3 cloves Garlic minced
  • 1 cup Sun-dried tomatoes chopped
  • 2 cups Spinach fresh
  • 1 cup Heavy cream
  • 1/2 cup Grated Parmesan cheese
  • 1/2 teaspoon Red pepper flakes
  • 1 tablespoon Fresh basil chopped

Instructions
 

  • Cook the penne pasta according to package instructions and drain.
  • Heat olive oil in a large skillet over medium-high heat.
  • Season the chicken pieces with salt, black pepper, and Italian seasoning.
  • Add the chicken to the skillet and cook until golden brown and cooked through.
  • Remove the chicken from the skillet and set aside.
  • In the same skillet, add garlic and sauté for 1 minute until fragrant.
  • Add sun-dried tomatoes and spinach, cooking until the spinach wilts.
  • Stir in the heavy cream and bring to a simmer.
  • Add the cooked pasta, chicken, Parmesan cheese, and red pepper flakes to the skillet, stirring to combine.
  • Cook for another 2-3 minutes until the sauce thickens.
  • Remove from heat and let it rest for 5 minutes.
  • Garnish with fresh basil before serving.

Notes

To ensure the pasta is perfectly cooked, be sure to salt your pasta water generously, as this is the only chance to season the pasta itself. Adjust the amount of red pepper flakes to suit your spice preference, and don’t be afraid to add more Parmesan cheese if you like a richer sauce.
