Ingredients
  

  • 4 fillets salmon skinless
  • 2 tablespoons olive oil
  • 5 cloves garlic minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup sun-dried tomatoes chopped
  • 1 teaspoon Italian seasoning
  • to taste salt and pepper
  • 3 cups baby spinach leaves
  • 1/2 cup Parmesan cheese grated
  • 2 tablespoons fresh basil chopped

Instructions
 

  • Heat olive oil in a skillet over medium heat.
  • Season salmon fillets with salt and pepper.
  • Place salmon in the skillet and cook for 5 minutes on each side until golden and cooked through.
  • Remove salmon from skillet and set aside.
  • In the same skillet, add minced garlic and sauté until fragrant.
  • Add heavy cream, chicken broth, and sun-dried tomatoes to the skillet and whisk together.
  • Stir in Italian seasoning, salt, and pepper.
  • Bring the mixture to a simmer and allow it to thicken slightly, about 5 minutes.
  • Add spinach leaves and stir until wilted.
  • Stir in Parmesan cheese until melted and combined.
  • Return salmon fillets to the skillet and spoon sauce over the top.
  • Garnish with fresh basil before serving.

Notes

For extra flavor, consider marinating the salmon in a bit of lemon juice and herbs before cooking. If time allows, let the sauce rest for a few extra minutes to ensure it thickens to your desired consistency. Always taste and adjust the seasoning as needed, especially when working with sun-dried tomatoes, as they can vary in saltiness.
