Ingredients
  

  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1 large egg
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • Line a baking sheet with parchment paper.
  • In the mixing bowl, cream together the butter and sugar until light and fluffy using an electric mixer.
  • Beat in the vanilla extract and egg until well combined.
  • In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, ginger, cardamom, cloves, and nutmeg.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Cover the dough and chill in the refrigerator for 30 minutes.
  • Scoop tablespoon-sized balls of dough and place them on the prepared baking sheet about 2 inches apart.
  • Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
  • Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a cooling rack.

Notes

For the best results, ensure that your butter is at room temperature before you begin mixing. Chilling the dough is crucial as it helps the cookies hold their shape while baking. Adjust the spices to taste if you prefer a stronger chai flavor.
