Ingredients
  

  • 1 cup unsalted butter softened
  • 3/4 cup brown sugar packed
  • 1/4 cup granulated sugar
  • 1 package instant vanilla pudding mix 3.4 ounces
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups semi-sweet chocolate chips

Instructions
 

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy using an electric mixer.
  • Beat in the instant vanilla pudding mix until well combined.
  • Add the eggs and vanilla extract, beating until smooth.
  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Stir in the chocolate chips with a spatula.
  • Drop rounded tablespoons of dough onto the prepared baking sheet.
  • Bake in the preheated oven for 8-10 minutes, or until the edges are golden brown.
  • Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a cooling rack to cool completely.

Notes

For best results, ensure all ingredients are at room temperature before starting. If you prefer your cookies to be softer and chewier, slightly underbake them and allow them to rest on the baking sheet for a few minutes after removing from the oven. Adjust the amount of chocolate chips to your preference for more or less chocolatey cookies.
