Ingredients
  

  • 2 tablespoon olive oil
  • 4 large onions thinly sliced
  • 2 clove garlic minced
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon soy sauce
  • 4 cup vegetable broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt to taste
  • Pepper to taste
  • 4 slice baguette toasted
  • 1 cup vegan cheese shredded

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add the sliced onions and sauté until they are caramelized, about 25-30 minutes.
  • Stir in the minced garlic and cook for another 2 minutes.
  • Add balsamic vinegar and soy sauce, stirring to combine.
  • Pour in the vegetable broth and add thyme and bay leaf.
  • Bring the soup to a boil, then reduce heat and let it simmer for 20 minutes.
  • Season with salt and pepper to taste.
  • Preheat the oven to broil.
  • Ladle the soup into oven-safe bowls and top each with a slice of toasted baguette.
  • Sprinkle shredded vegan cheese over the baguette slices.
  • Place the bowls under the broiler until the cheese is melted and bubbly, about 3-5 minutes.
  • Allow the soup to rest for 10 minutes before serving.

Notes

For the best flavor, ensure the onions are thoroughly caramelized to bring out their natural sweetness which is essential for an authentic French onion soup taste. Adjust seasoning according to your preference, and feel free to experiment with different types of vegan cheese for topping.
