Ingredients
  

  • 1 cup green lentils rinsed
  • 2 tablespoons olive oil
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 2 carrots diced
  • 2 stalks celery diced
  • 1 teaspoon cumin powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon paprika
  • 6 cups vegetable broth
  • 1 can diced tomatoes 14.5 oz
  • salt to taste
  • pepper to taste
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and garlic, sauté until onion is translucent.
  • Stir in diced carrots and celery, cook for 5 minutes.
  • Add cumin, turmeric, and paprika, cook for 1 minute until fragrant.
  • Pour in vegetable broth and bring to a boil.
  • Stir in lentils and diced tomatoes, season with salt and pepper.
  • Reduce heat and simmer for 30 minutes until lentils are tender.
  • Stir in lemon juice and cook for an additional 2 minutes.
  • Remove from heat and let soup rest for 5 minutes.
  • Garnish with fresh parsley before serving.

Notes

For a richer flavor, consider letting the soup simmer longer, up to an hour, to allow the flavors to meld even further. Adjust the seasoning to your preference, and feel free to add more vegetables like spinach or kale for extra nutrients. If you prefer a thicker consistency, you can blend a portion of the soup and stir it back in.
