Ingredients
  

  • 2 tablespoon olive oil
  • 1 medium onion chopped
  • 3 clove garlic minced
  • 6 cup ripe tomatoes chopped
  • 2 cup vegetable broth
  • 1 tablespoon tomato paste
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried oregano

Instructions
 

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and cook until translucent, about 5 minutes.
  • Stir in the minced garlic and cook for another 1 minute.
  • Add the chopped tomatoes, vegetable broth, and tomato paste to the pot.
  • Stir in the sugar, salt, black pepper, basil, and oregano.
  • Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes.
  • Remove the pot from heat and allow the soup to cool slightly.
  • Use a blender or immersion blender to puree the soup until smooth.
  • Return the soup to the pot and reheat if necessary.
  • Adjust seasoning to taste and serve hot.

Notes

For a richer flavor, roast the tomatoes before adding them to the soup, and use fresh basil and oregano if available. This soup pairs well with crusty bread or a side salad. Adjust the seasoning as needed to suit your taste, and for extra creaminess, consider adding a splash of coconut milk or almond cream.
