Ingredients
  

  • 2 tablespoon olive oil
  • 1 large onion chopped
  • 2 clove garlic minced
  • 2 medium carrot sliced
  • 2 stalk celery sliced
  • 1 large potato diced
  • 1 bell pepper chopped
  • 1 zucchini sliced
  • 1 cup green beans trimmed
  • 4 cup vegetable broth
  • 1 can diced tomatoes 14 oz
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 tablespoon fresh parsley chopped

Instructions
 

  • Heat the olive oil in a large pot over medium heat.
  • Add the onion and garlic and sauté until the onion is translucent.
  • Stir in the carrots, celery, and potato, cooking for 5 minutes.
  • Add the bell pepper, zucchini, and green beans to the pot.
  • Pour in the vegetable broth and canned tomatoes, stirring to combine.
  • Season the stew with thyme, basil, salt, and pepper.
  • Bring the stew to a boil, then reduce the heat and simmer for 30 minutes.
  • Stir occasionally and check the vegetables for tenderness.
  • Remove from heat and let the stew rest for 10 minutes.
  • Garnish with fresh parsley before serving.

Notes

For best results, ensure all vegetables are cut to similar sizes for even cooking. Adjust the seasoning to your taste and consider adding a splash of lemon juice for extra brightness. If you'd like a thicker stew, mash some of the potatoes and vegetables before serving. Pair this hearty stew with crusty bread for a complete meal.
