Ingredients
  

  • 4 tablespoons unsalted butter
  • 4 large yellow onions thinly sliced
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 3 cloves garlic minced
  • 1/2 cup dry white wine
  • 8 cups vegetable broth
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • 1 baguette sliced
  • 2 cups Gruyère cheese grated
  • 1 tablespoon olive oil

Instructions
 

  • Melt the butter in a large pot over medium heat.
  • Add the sliced onions, salt, and sugar, and cook until softened and caramelized, about 30 minutes.
  • Stir in the minced garlic and cook for 1 minute.
  • Pour in the white wine and cook until reduced by half.
  • Add the vegetable broth, thyme, and bay leaf, and bring to a boil.
  • Reduce the heat and simmer for 20 minutes.
  • Preheat the oven to 400°F (200°C).
  • Lightly brush the baguette slices with olive oil and toast in the oven until golden brown.
  • Remove the thyme sprigs and bay leaf from the soup.
  • Ladle the soup into oven-safe bowls, top with baguette slices, and sprinkle with Gruyère cheese.
  • Place the bowls under the broiler until the cheese is bubbly and golden, about 5 minutes.
  • Let the soup rest for 10 minutes before serving.

Notes

For best results, use a heavy-bottomed pot to ensure even cooking of the onions, and don't rush the caramelization process as it develops the soup's deep flavor. Ensure the cheese is fully melted and golden for a delicious finishing touch.
