Ingredients
  

  • 450 grams pasta
  • 2 tablespoons olive oil
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup vodka
  • 800 grams canned crushed tomatoes
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt to taste
  • Black pepper to taste
  • Fresh basil leaves for garnish

Instructions
 

  • Bring a large pot of salted water to a boil.
  • Add the pasta to the boiling water and cook according to package instructions until al dente.
  • While pasta is cooking, heat olive oil in a large skillet over medium heat.
  • Add onion and cook until translucent, about 5 minutes.
  • Stir in garlic and red pepper flakes, cooking for 1 minute until fragrant.
  • Pour vodka into the skillet and cook until reduced by half, about 3 minutes.
  • Add crushed tomatoes to the skillet and simmer for 10 minutes.
  • Stir in heavy cream and cook for another 2 minutes.
  • Drain the pasta and add it to the skillet, tossing to coat with the sauce.
  • Stir in Parmesan cheese and season with salt and black pepper.
  • Allow the pasta to rest for 5 minutes before serving.
  • Garnish with fresh basil leaves before serving.

Notes

For extra flavor, consider adding a pinch of nutmeg or a splash of lemon juice to the sauce. Ensure not to overcook the pasta; it should be al dente to absorb the sauce perfectly. If you prefer a thicker sauce, let it simmer a bit longer to your desired consistency.
