Watermelon Jam

  • 1 Blender
  • 1 Fine mesh strainer
  • 1 Wooden spoon

  • 4 sterilized jars with lids

Ingredients
  

  • 4 cups watermelon pulp seeded and chopped
  • 2 cups granulated sugar
  • 2 tablespoons lemon juice
  • 1 packet fruit pectin

Instructions
 

  • Place the watermelon pulp in a blender and puree until smooth.
  • Strain the blended watermelon through a fine mesh strainer into the saucepan to remove excess pulp.
  • Add sugar and lemon juice to the watermelon juice in the saucepan and stir well.
  • Bring the mixture to a boil over medium heat, stirring occasionally.
  • Once boiling, stir in the fruit pectin and continue to boil for another minute.
  • Remove the saucepan from the heat and skim off any foam from the surface.
  • Use the ladle to pour the hot jam into sterilized jars, leaving some headspace.
  • Seal the jars with lids and let them cool to room temperature.
  • Once cooled, refrigerate the jars for at least 12 hours to allow the jam to set.
  • Serve the watermelon jam as a spread for bread or a topping for desserts.

Notes

Make sure to sterilize your jars properly to ensure the longevity and safety of your jam. It's crucial to skim off the foam as it can affect the texture and clarity of the jam. If desired, a pinch of salt can be added to enhance the flavors. Adjust the sugar amount based on the sweetness of the watermelon.
