  • 1 Cutting board
  • 1 plate

Ingredients
  

  • 4 slices watermelon seedless and large
  • 4 slices bread whole grain
  • 2 tablespoons cream cheese
  • 1 tablespoon honey
  • 1/4 cup mint leaves fresh

Instructions
 

  • Place the slices of whole grain bread on a cutting board.
  • Spread 1 tablespoon of cream cheese evenly on each slice of bread.
  • Drizzle 1/2 tablespoon of honey over each slice of cream cheese.
  • Place 2 slices of watermelon on two of the bread slices.
  • Add a few fresh mint leaves on top of the watermelon slices.
  • Top each watermelon slice with the remaining bread slices, cream cheese side down.
  • Press gently to secure the sandwich.
  • Allow the sandwiches to rest for 5 minutes to let the flavors meld together.
  • Slice each sandwich in half and serve on a plate.

Notes

For a refreshing twist, consider chilling the watermelon slices in the refrigerator before assembling the sandwiches. This will enhance the cooling effect of the watermelon and contrast nicely with the creamy texture of the cream cheese. If you'd like a bit of crunch, add some thinly sliced cucumber or radish to the sandwich.
