Whipped Mashed Potatoes with Roasted Apple Purée

Ingredients
  

  • 4 potatoes large, peeled and quartered
  • 2 tablespoon unsalted butter
  • 1/2 cup whole milk
  • 1 teaspoon salt
  • 2 apples large, peeled, cored, and quartered
  • 1 tablespoon olive oil
  • 1/4 teaspoon cinnamon
  • 1 tablespoon maple syrup
  • 1/4 teaspoon black pepper

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Place the apple quarters on a baking sheet, drizzle with olive oil, and sprinkle with cinnamon.
  • Roast the apples in the oven for 25 minutes until tender.
  • While apples are roasting, boil the potatoes in a large pot of salted water until tender, about 20 minutes.
  • Drain the potatoes and return them to the pot.
  • Add butter and milk to the potatoes, then mash until smooth and creamy.
  • Blend the roasted apples with maple syrup in a blender until smooth.
  • Combine the apple purée with mashed potatoes in a large mixing bowl and whisk together.
  • Season the mixture with salt and black pepper to taste.
  • Let the mashed potatoes rest for 10 minutes before serving.

Notes

For fluffier mashed potatoes, consider using a potato ricer instead of a masher. If you desire a richer texture, substitute half-and-half or cream for the milk. Adjust the cinnamon and maple syrup to taste if you prefer a sweeter apple purée. Serve the dish warm and garnish with fresh herbs like chives or parsley for added freshness.
