White Bean Chicken Chili

Ingredients
  

  • 1 tablespoon olive oil
  • 1 pound chicken breast diced
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper
  • 2 15-ounce cans white beans drained and rinsed
  • 2 cups chicken broth
  • 1 4-ounce can chopped green chilies
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh cilantro chopped
  • 1 lime cut into wedges

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add diced chicken and cook until browned, about 5 minutes.
  • Remove chicken from the pot and set aside.
  • In the same pot, add chopped onion and cook until soft, about 3 minutes.
  • Stir in minced garlic, cumin, oregano, chili powder, and cayenne pepper, cooking for 1 minute.
  • Add the cooked chicken back to the pot.
  • Stir in white beans, chicken broth, chopped green chilies, salt, and black pepper.
  • Bring the mixture to a boil, then reduce heat and simmer for 20 minutes.
  • Remove the pot from heat and let the chili rest for 5 minutes.
  • Serve hot, garnished with fresh cilantro and lime wedges.

Notes

For extra flavor, consider adding a pinch of smoked paprika or topping the chili with shredded cheese or sour cream. Adjust the level of spice to your preference by modifying the amount of cayenne pepper or chili powder. This dish can be made a day ahead of time, as flavors meld beautifully when allowed to sit overnight in the fridge.
