Ingredients
  

  • 2 tablespoons olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 pound ground turkey
  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cans (15 ounces each) white beans drained and rinsed
  • 1 can (15 ounces) diced tomatoes
  • 2 cups chicken broth
  • 1 cup frozen corn
  • 1 lime juiced
  • 1/4 cup fresh cilantro chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add diced onion and minced garlic, and sauté until soft.
  • Add ground turkey to the pot and cook until browned.
  • Stir in ground cumin, chili powder, cayenne pepper, salt, and black pepper.
  • Add the drained white beans, diced tomatoes, and chicken broth to the pot.
  • Bring the mixture to a simmer and cook for 30 minutes.
  • Stir in the frozen corn and cook for an additional 5 minutes.
  • Remove the pot from heat and stir in lime juice and chopped cilantro.
  • Allow the chili to rest for 10 minutes before serving.

Notes

For the best flavor, let the chili simmer slowly to ensure the spices meld well with the other ingredients. Adjust seasoning to taste, especially if you prefer a spicier dish. The chili tends to taste even better the next day, so consider making it in advance for an easy meal.
