White Bean Chili

Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 medium green bell pepper diced
  • 2 cans white beans drained and rinsed
  • 1 can diced tomatoes with green chilies
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups vegetable broth
  • 1/4 cup fresh cilantro chopped (optional for garnish)

Instructions
 

  • Heat the olive oil in a large pot over medium heat.
  • Add the diced onion and sauté for 3-4 minutes until translucent.
  • Stir in the minced garlic and diced green bell pepper, cooking for another 2 minutes.
  • Add the drained white beans and diced tomatoes with green chilies to the pot.
  • Sprinkle in the ground cumin, chili powder, smoked paprika, salt, and black pepper.
  • Pour in the vegetable broth and stir to combine all ingredients.
  • Bring the mixture to a boil, then reduce the heat to simmer.
  • Cover the pot and let the chili simmer for 20 minutes, stirring occasionally.
  • Remove the pot from heat and let it rest for 5 minutes before serving.
  • Garnish with fresh cilantro if desired and serve hot.

Notes

For the best flavor, consider making the chili a day in advance to allow the spices to meld together more thoroughly. Adjust the level of heat by adding more or less chili powder depending on your preference. If you prefer a thicker chili, mash some of the beans against the side of the pot with a spoon.
