White Bean Kale Soup

Ingredients
  

  • 2 tablespoon olive oil
  • 1 medium onion chopped
  • 2 clove garlic minced
  • 3 cup vegetable broth
  • 2 can white beans drained and rinsed
  • 4 cup kale chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1 tablespoon lemon juice

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add the chopped onion and sauté until translucent, about 5 minutes.
  • Stir in the minced garlic and cook for an additional 1 minute.
  • Pour in the vegetable broth and bring to a simmer.
  • Add the white beans, kale, salt, black pepper, thyme, and rosemary.
  • Stir well and let the soup simmer for 20 minutes.
  • Remove from heat and stir in the lemon juice.
  • Let the soup rest for 5 minutes before serving.

Notes

For a creamier texture, you can blend a portion of the soup before adding the kale. Adjust the seasoning to your taste, and if the soup is too thick, add more vegetable broth. Serve with crusty bread for a hearty meal.
