Ingredients
  

  • 2 tablespoon olive oil
  • 1 medium onion diced
  • 2 clove garlic minced
  • 2 carrots sliced
  • 2 stalk celery sliced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 4 cup vegetable broth
  • 2 can white beans drained and rinsed
  • 2 cup spinach leaves
  • 1 tablespoon lemon juice
  • 1/4 cup grated Parmesan cheese

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add diced onion and minced garlic, sauté until onion is translucent.
  • Add carrots and celery, cook for 5 minutes, stirring occasionally.
  • Season with salt, black pepper, thyme, and rosemary, and stir well.
  • Pour in vegetable broth and bring to a boil.
  • Reduce heat to a simmer and add white beans, cooking for 15 minutes.
  • Stir in spinach leaves and cook until wilted.
  • Remove from heat and add lemon juice.
  • Let the soup rest for 10 minutes before serving.
  • Serve hot, garnished with grated Parmesan cheese.

Notes

For a richer flavor, consider using homemade vegetable broth if possible. You can also add a pinch of red pepper flakes for a touch of heat. This soup pairs well with crusty bread, and for a vegan version, simply omit the Parmesan cheese or replace it with a vegan cheese substitute. Adjust seasonings to taste and feel free to add additional vegetables or herbs for variety.
