Equipment

  • 2 9-inch round cake pans
  • 1 Electric mixer
  • 1 Mixing bowl
  • 1 Spatula
  • 1 Wire rack
  • 1 Serrated knife
  • 1 cake stand

Ingredients

  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1/2 cup unsalted butter softened
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup white chocolate melted
  • 1/2 cup sour cream
  • 2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 cup cherries pitted and halved
  • 1/2 cup white chocolate shavings

Instructions

  • Preheat the oven to 350°F (175°C) and grease the cake pans.
  • In a mixing bowl, cream together the butter and sugar until light and fluffy.
  • Add eggs one at a time, beating well after each addition.
  • Stir in vanilla extract.
  • In another bowl, combine flour, baking powder, and salt.
  • Gradually add dry ingredients to the wet mixture, alternating with sour cream.
  • Fold in melted white chocolate until well combined.
  • Divide batter evenly between the prepared cake pans.
  • Bake for 25 minutes or until a toothpick inserted comes out clean.
  • Allow cakes to cool on a wire rack for 10 minutes, then remove from pans to cool completely.
  • In a bowl, whip heavy cream and powdered sugar until stiff peaks form.
  • Use a serrated knife to level the tops of the cakes.
  • Place one cake layer on the cake stand and spread a layer of whipped cream.
  • Scatter half of the cherries over the cream.
  • Place the second cake layer on top, spread the remaining whipped cream, and top with cherries and white chocolate shavings.
  • Let the cake rest in the refrigerator for at least 1 hour before serving.

Notes

For best results, ensure all ingredients are at room temperature before starting. You can customize the decoration with more cherries or additional white chocolate shavings for an elegant finish. Remember to handle the cake layers gently to prevent breaking, and use a sharp serrated knife for clean slices.
