Ingredients
  

  • 3 medium zucchinis sliced
  • 1 cup feta cheese crumbled
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 units eggs beaten

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Lightly grease the baking dish with olive oil.
  • Arrange the zucchini slices in the baking dish.
  • In a mixing bowl, whisk together the eggs, olive oil, garlic, oregano, salt, and black pepper.
  • Pour the egg mixture over the zucchini slices.
  • Sprinkle the crumbled feta cheese evenly over the top.
  • Bake in the preheated oven for 30 minutes or until the zucchini is tender and the top is golden brown.
  • Remove from the oven and let the dish rest for 10 minutes before serving.

Notes

For added flavor, consider adding a sprinkle of fresh herbs like parsley or basil before serving. If you prefer a bit of a kick, include a pinch of red pepper flakes in the egg mixture.
